Grand'Mère spaetzle: pasta that changes pasta!
The spaetzle, like the knepfle, are an Alsatian specialty different from other pasta because it comes from a liquid dough, a mixture of eggs and durum wheat semolina which passes through a colander and falls into boiling water for to be cooked. Thicker and more irregular in appearance, it is "pasta ... which changes pasta". Grand'Mère spaetzles have an inimitable flavor: delicious as an accompaniment to the finest dishes such as game, fresh salmon or foie gras, this pasta will also surprise you as a gratin or served with a touch of butter and some well-chosen mushrooms.
- Superior quality durum wheat semolina, fresh eggs (30%) or 320 g per kilo of semolina.
